Scrambled eggs with smoked brisket and tomatoes

This is our family’s favorite breakfast. It turns out very tasty!
Delicious, easy, fast! Try it, you won’t regret it! The dish is not “wet” as it is prepared without a lid! The aroma is unreal when cooked! The recipe has been worked out for years.

INGREDIENTS FOR 3 SERVINGS
eggs 5
Bulgarian pepper 1
Ham 50 gr
Pork brisket 50 gr
Tomatoes 1
Bow 3
Green onion to taste
Tomato paste 1 tbsp
Ground black pepper to taste

COOKING
Step 1. We prepare products for our dish.
Step 2. We cut all the ingredients into cubes, and the ham into stripes. Tomatoes in half rings.
Step 3. I first fry the onion, as soon as it starts to become transparent, I will add ham and brisket. I fry for about 3 minutes.
Step 4. Next, add bell pepper and fry for another 3-4 minutes. I fry until the pepper is soft. Salt and pepper at this stage.
Step 5. Add tomatoes. As soon as the tomatoes soften, I remove the skins from the tomato, they are removed very easily.
Step 6. Add tomato paste. If the summer tomatoes are juicy and fragrant, then you can not add pasta. But in the winter months, it is appropriate.
Step 7. Stir and simmer for just a couple of minutes.
Step 8. I beat in the eggs so as not to pierce the yolks. I turn off the fire.
Step 9. And then my secret! I gently mix the proteins with the resulting mass of vegetables and meat. I try not to cling to the yolks. I fry for about 2 minutes, until the proteins are ready (become not liquid). The yolks should remain liquid.
Step 10. Sprinkle with green onions! Here is our dish ready to serve.
Step 11. Carefully remove the yolks from the pan along with the “substrate” and arrange them on plates. Enjoy your meal!
