Scrambled eggs in potato baskets

The recipe is not the fastest breakfast, but it can densely feed many hungry relatives who, after a short wait, will be satisfied with the delicious scrambled eggs you cooked – fried eggs in potato baskets and will be full.

Ingredients:
Potatoes (medium) – 6-8 pcs.
Chicken eggs – 24 pcs.
Salt, pepper to taste

Step 1.
And so let’s start with cooking potato baskets, wash the potatoes well, dry them, put them on a baking sheet and bake them at 200C for 50-60 minutes. Next, let the potatoes cool slightly, remove the peel and grate on a coarse grater.

Take a muffin pan or something like that, coat it with vegetable oil, you can cream it. Then place 3-4 tablespoons of grated potatoes in each. Press with your hands to the sides, creating a semblance of a basket, season with pepper and salt on top. Put in the oven for 18-20 minutes and bake at 220C. Don’t let the baskets burn!

Step 3
After they acquire an appetizing light golden color, remove, let cool. Now crack an egg into each potato basket, being careful not to break the yolk. Pepper, salt and put in the oven for exactly 15 minutes. Before serving, remove from molds, garnish with herbs and serve with vegetables to the table.
