Winter Chic Risotto

This dish is quite suitable for those who are fasting or just “on a diet”! It is light and satisfying at the same time.
Ingredients:

Onion – 2 pcs.

Garlic (chopped) – 4 cloves

Green beans (pre-boiled) – 1 tbsp.

Mushrooms (chopped) – 3 tbsp.

Thyme – 2 tbsp.

Salt – 1 tsp

Wine (white) – 1.5 tbsp.

Rice – 2 tbsp.

Broth – 5 tbsp.

Spinach – 2 tbsp.

Cooking method:

In a deep frying pan, heat the vegetable oil, pour the onion, garlic, boiled green beans and fry for 5-7 minutes.

Then add mushrooms, thyme and salt. We still simmer for 3-5 minutes. Pour in the wine and stir. Pour the washed rice and one bowl of broth. Simmer, stirring constantly. Adding broth from time to time.

Cook the dish until the liquid evaporates. Then we add spigot. Simmer another 2-3 minutes. And the dish is ready.

Pour the risotto on a plate, sprinkle with chopped green onions and serve with Parmesan cheese.
