Delicious squid with arugula

Squids for weight loss are ideal. There is as much protein in them as in meat, but there is very little fat. For 100 grams, they contain no more than 100 kcal and as much as 18 grams of protein, plus many valuable trace elements.

All seafood is low in calories, but compared to crabs, langoustines and shrimp, squids are inexpensive. I prefer to buy our Far East squid. His carcass is pink with brown edging, and the taste is more interesting than that of white.

In order for the squid to retain a dense texture, not to tear, and at the same time not to turn out rubber, you need to follow some rules. I will share with you my tricks using the example of one of my favorite dishes – squid with arugula. The recipe is very simple, the ingredients are available. Not everyone likes arugula, but it can be replaced with any salad leaves.

Ingredients

– Far Eastern squid – 250 gr
– dry white wine – 30 ml
– ¼ of an onion
– 2 garlic cloves
– a bunch of arugula
– 1 tsp lemon juice
– 1 tsp olive oil
– 1 tsp soy sauce
– sprig of parsley
– thyme, basil
– ground black pepper, salt.

Recipe for delicious squid with arugula
Before frying, first clean the squid from the film. In order to do this easily and quickly, you should place them in a bowl and pour boiling water for half a minute, and then throw them into cold water.

The skin will curl up and it will be easy for you to remove it. Carefully remove the transparent spine of the carcass, rinse. Now the squids are completely ready for further processing.

Cut the peeled carcasses into rings or strips. So that the squid does not tear during cutting, the knife must be sharp.

Free the onion and garlic from the husk, wash, chop the onion into strips, garlic into slices. Place them in a hot frying pan, pre-greased with a thin layer of olive oil.

Literally in minutes, throw squid rings.

After 30 seconds, when the squids become elastic, you can pour in a portion of white wine, simmer the squid for another half a minute, during which time the wine will evaporate and the meat will reach the desired state. Do not cover the pan with a lid.

Add spices and a few sprigs of fresh parsley to the pan. Just do not overload the squids with spices, they absorb the aroma of spices so much, and the dish may come out too saturated.

Lay arugula leaves on a plate, after rinsing and drying.

You can prepare a simple sauce for such squids by mixing olive oil, soy sauce and lemon juice.

Pour sauce over and serve. I also added canned green peas. Mmm, very tasty. And absolutely no calories.
