Shakshuka. Jewish scrambled eggs

Very tasty and healthy dish of eggs and vegetables with Arabic roots

Shakshuka is a dish of Arabic cuisine that is very healthy and tasty.

INGREDIENTS FOR 3 SERVINGS
Bulgarian pepper 1 pc
Eggs 3 pcs
Salt to taste
Tomatoes 2 pcs
Hot pepper 0.5 pcs
Onion 1 pc
Olive oil 30 ml
Sugar 5 gr
Zira 0.5 h l
Parsley 30 gr
Green cilantro 0.5 bunch.

COOKING
Lightly fry the peeled and half-ringed onion in olive oil, then pour a little water into it and keep it on medium heat until the water evaporates, stirring often. Cook for 10 minutes. Add water 6-7 times, as it evaporates. You should get a soft cream-colored mass.

Make cross cuts on the tomatoes and dip them in boiling water for a few seconds. Remove the skin and cut the pulp into cubes.

Put the tomatoes to the onion, add diced bell pepper, hot pepper here. Simmer on fire for 10 minutes.

Salt, sweeten, put zira and herbs.

Something like jam from vegetables will come out.

Now carefully beat the eggs onto these vegetables so as not to damage the yolk.

Salt the protein, but not the yolk, otherwise the salt will create stains on it.

Keep the shakshuka on fire until cooked, do not cover with a lid.
