Pilaf with scallops
For the recipe you will need:
rice (long grain) – 1 cup
scallops (frozen) – 400g
onion – 1 pc.
carrots – 1 pc.
vegetable oil – 5 tbsp.
salt – 1 tsp
black pepper (ground) – 1/4 tsp
nutmeg (grated) – 1/4 tsp
thyme (dried) – to taste.
To cook Pilaf with scallops you need:
Rinse rice and boil in salted water until tender. Drain the rice in a colander, rinse and drain.
In a frying pan, heat 1 tbsp. a spoonful of vegetable oil and fry onion sliced in thin half rings on it until golden brown. Add grated carrots and fry together with onions for a few minutes.
Do not defrost the scallops, put them in a dry hot pan and cook until the liquid has completely evaporated. Add 1/2 tsp. salt, 2 tbsp. vegetable oil and fry the scallops, stirring, until golden brown.
Add fried vegetables, tomato paste to the scallops, mix and simmer for 5 minutes. Put the rice, mix, pour in about 1 cup of water and cook over low heat under the lid for 10 minutes.
Add spices, mix and put rice with scallops on a plate.
