Spinach baked vegetables

Is it possible to come up with something tastier, healthier and more satisfying than a baked vegetable platter for lunch? Whole plant foods are the best food for humans.

Ingredients:

For vegetables:

1 sweet potato
1 st. young small potatoes
3 small eggplants
1 head of garlic
1 tsp coconut oil.

For salad:

3 art. spinach leaves,
juice of 1 lime,
1 tsp maple syrup,
2 chopped tomatoes,
1 chopped bell pepper,
1 st.л. sunflower seeds,
black pepper and salt.

Cooking:

Heat up the oven to 180C. Wash vegetables, drain. Make some holes in the sweet potato. Cut the eggplant into slices, blot in coconut oil. Put the vegetables on a baking sheet, bake for 30 minutes. Vegetables should become soft.
We are preparing a salad. To do this, mix greens with lemon juice, maple syrup, black pepper and salt. Add tomato and pepper, sprinkle with sunflower seeds. Mix roasted vegetables and salad.
