Smoked salmon, shrimp and scallop salad with arugula and asparagus

For the recipe you will need:
tiger prawns – 8 pcs.
sea ​​scallops – 8 pcs.
olive oil – 1 tbsp.
smoked salmon – 100g
arugula – to taste
asparagus – 4 pcs.
Dijon mustard – 1 tbsp
egg (yolk) – 1 pc.
sherry vinegar – 50 ml
walnut oil – 100 ml
lime (juice) – 1/2 pc.
salt, pepper – to taste.
To prepare Salad of smoked salmon, shrimps and scallops with arugula and asparagus you need:

Peel the tiger prawns from the shell and, together with the scallops, fry in olive oil for 1-2 minutes. Cut the smoked salmon into large strips. Cut asparagus and arugula into pieces. Combine the prepared ingredients and put on a dish.

Combine mustard, yolk, vinegar and beat the mixture with a mixer at maximum speed. Continuing to beat, add walnut oil and lime juice. Season the sauce with salt and pepper to taste.

Drizzle salmon and scallop salad with prepared dressing. Sprinkle with finely chopped green onions, serve the dish to the table.
