Asian Chicken Mango Salad
For the recipe you will need:
onion (small) – 1 pc.
garlic (crushed) – 1 clove
ginger (finely chopped) – 2.5 cm.
coriander (ground) – 1 tsp
garam masala – 1 tsp
chili powder (mild) – 1/2 tsp
turmeric – 1/2 tsp
olive oil – 4 tbsp.
chicken breast (fillet) – 4 pcs.
coriander (chopped fresh) – 1 tbsp.
juice – 1/2 lemon
lettuce (leaves) – 150g
mango (chopped) – 1 pc.
sweet pepper (finely chopped) – 1 pc.
To prepare Asian Chicken and Mango Salad you need:
Combine onion, garlic, all spices except fresh coriander, 2 tbsp oil and 2 tbsp water in a food processor. Place chicken in bowl with marinade. Cover and refrigerate for 4 hours.
Heat up the grill. Remove chicken from marinade and place on a baking sheet. Grill under the grill for about 10-15 minutes, turning. Cut into strips.
Mix remaining oil, fresh cilantro and lemon juice. Season to taste. Place lettuce leaves in a bowl, drizzle with dressing and toss to combine. Add chicken, mango and red pepper, drizzle with remaining dressing and serve.
