Spring Chicken Meatball Salad

For the recipe you will need:
parsley (greens) – 1 tbsp.
mayonnaise – 4 tbsp.
egg – 4 pcs.
green peas (canned) – 4 tbsp.
cucumbers (salted) – 1 pc.
potatoes – 2 pcs.
meatballs (chicken) – to taste
for meatballs:

chicken – 400g
onion – 1 pc.
water – 2 tbsp.
egg (protein) – 1 pc.
salt – to taste.
To prepare Salad with chicken meatballs “spring” you need:

Wash the young potatoes, scrape, dip in salted boiling water and cook until soft, then drain and cool. Hard boil eggs, cool and peel. Remove skin from cucumber. Cut the prepared products into cubes, combine, add green peas and chilled meatballs, season the salad with mayonnaise and mix gently. After that, put a slide on a plate, decorate with chopped egg, green peas and parsley and serve.

Preparation of meatballs: pass chicken meat without skin twice through a meat grinder along with an onion peeled and cut in half. Add salt and egg white to the minced meat, mix well, pour in water in two doses and beat until smooth.

Form small balls from this mass, lower them into boiling salted chicken broth or water and cook after surfacing for about 5 minutes. Take out the meatballs with a slotted spoon and let cool.
