Pies with potatoes and liver

Once, sorting through recipes for dough for pies, I chose this one. Its plus is that the dough is prepared quickly, it does not require additional time to approach. At the same time, the pies are excellent, soft – not only on the first day, but also on the next. You can make any filling for pies. This time I propose to cook delicious pies with potatoes and liver.

First you need to prepare a non-dough yeast dough. And then we’ll make the filling.

Ingredients for the preparation of unpaired yeast dough:

Flour 400-500 g
Milk 1 stack
Pressed yeast 30 g
Egg 1 pc
Vegetable oil 2 tbsp.
Sugar 2 tsp
Salt 1 tsp
Filling for pies:

Potatoes – 3 pcs
Beef liver – 200 g
Bulb of medium size – 1 pc.
Butter – for frying onions
Milk 1/3 tbsp.
Recipe for instant yeast dough (non-steamed):

1. Knead yeast in warm milk with a fork, add sugar.
2. Sift flour and pour into a deep bowl.
3. Make a hole in the center of the sifted flour and pour the dissolved yeast into it, mix in a little flour. Leave for 5 minutes to ferment so that the yeast rises a little.
4. Beat the egg and add to the dough.
5. Then pour vegetable oil into the dough.
6. Gradually start mixing flour with a spoon in the direction from the center, gradually grabbing the flour from the edges. Thus, knead a soft dough – so that it does not stick to your hands.
It is better to pour the sifted flour first into the bowl, not all, so that it does not turn out to be too much. Leave some on a separate plate. When kneading, if there is not enough flour, you can add more. From the prepared dough, you can immediately bake pies

The dough can be used not only for making pies with potatoes and liver, but also for whites, as well as baking in the oven: pies, pies, pizza, etc.

Unused dough can simply be frozen and used the same way next time without making a new one.

Now the actual recipe for making pies with potatoes and liver:

1. Peel and boil potatoes.
2. Cut the liver into small pieces and also boil for 10 minutes
3. Finely chop the onion and fry in butter until golden brown.
4. Mash boiled potatoes, adding a small amount of hot milk to it.
5. Grind the cooked liver in a blender or on meat grinder.
6. Add chopped liver and fried onions to potatoes, salt to taste.
7. Lubricate the table with vegetable oil and put the dough on it.
8. Separate about a third of the dough from the dough and roll it into a tourniquet of 3-3.5 cm.
9. Cut into pieces and give them a rounded shape
10. Make flat cakes out of pieces by flattening them with your fingers.
11. Put the filling on the cakes.
12. Pinch the edges and turn the seam down
13. Flatten the pie with the palm of your hand to the desired thickness.
14. Fry in well-heated oil until golden brown. By the way, it is better to pour more oil so that the pies are well fried on all sides.
Ready-made pies are better not to put on top of each other, but to put the edge up.

Serve pies with sour cream or milk. Enjoy your meal!
