Kefir pies with potatoes

This recipe comes from my grandma’s “signature” recipes. According to this recipe, I make pies as thin as possible, and I try to put as many toppings as possible, then they turn out to be very tasty!

By the way, the filling for pies can be absolutely any, but according to this recipe, I cook them mainly with potatoes. Sometimes I add a boiled chopped egg. Mushrooms can also be added, I have not tried it, but I think it will also be delicious.
Dough Ingredients:

Kefir 0.5 l
Egg 1 pc.
Salt 0.5 tsp
Soda 1 tsp (without slide)
Flour
Filling Ingredients:

Potatoes 5 pcs.
Onion 1 pc.
Butter or vegetable oil (for frying onions)
In addition, you will need vegetable oil for frying pies.

Recipe for making pies on kefir with potatoes:

1. Add egg and salt to kefir, mix.
2. Gradually mix the sifted flour with soda into the mixture and knead the dough for pies. You need to take enough flour to end up with a soft, elastic and not too steep dough.
3. Make the filling. Fry the onion in butter or vegetable oil. Boil the potatoes in salted water and mash them while still hot. Add the fried onion to the potatoes and mix, if necessary – add more salt to taste.
4. Divide the dough into 2 or 3 parts. Roll each part into a tourniquet and divide it with a knife into equal pieces.
5. Make a cake from each piece and put the potato filling on it. I spread the filling, slightly lengthening it so that it is distributed evenly along the entire length of the pie.
6. Pinch the opposite edges of the cake, in the same way as we make dumplings, and flatten slightly with the palm of your hand, and then roll it out thinly with a rolling pin.
7. A frying pan with vegetable oil should be well heated and you can put pies on it. Fry over medium heat on each side for 2-3 minutes.
Serve pies with milk or sour cream!
