Diet Pancake Pie with Tomatoes and Cheese

Ingredients:

Pancakes:
● 3 eggs
● 300 ml skimmed milk
● 150 g whole grain or oat flour
● 1 small bunch of greens
● salt, stevia to taste

Filling:
● 300 g mushrooms
● 4 tomatoes
● 200 g hard low-fat cheese
● 2 garlic cloves optional

Cooking:

1. First, cook the pancakes. To do this, beat the eggs with milk, then add the flour, salt and stevia. Finely chop the greens and add to the pancake dough. Fry pancakes in a hot pan on both sides.
2. You will have about 5 – 6 pancakes. Cut the tomatoes into circles, rub the cheese on a coarse grater, peel the mushrooms, cut into plates and lightly fry, add a little salt. If you are using garlic, press it through a garlic press.
3.Now fold the cake. To do this, put one pancake in a mold, put some tomatoes (salt and pepper), mushrooms and sprinkle with cheese and garlic on it, cover with a second pancake and so on.
4. Sprinkle the top pancake with cheese and send the pie to the oven preheated to 180 degrees for 15 – 20 minutes. Let the pie cool slightly and serve hot or cold.
