Zucchini and Tomato Omelette

Delicious and healthy breakfast for zucchini lovers.
Bright, beautiful, summery fresh! Summer is here and it’s time to gorge on vegetables. If you cook such a breakfast for your home, everyone will be happy, even those who did not like zucchini before.

INGREDIENTS FOR 6 SERVINGS
Zucchini 500 gr
Bulgarian pepper 1 pc
Tomatoes 2 pcs
Chicken eggs 7 pcs
Dill 10 gr
Parsley 10 gr
Kefir 3 tbsp
Sour cream 4 tbsp
Salt to taste
Ground black pepper to taste
paprika to taste
Butter 20 gr
Vegetable oil 30 ml
Flour 30 gr

COOKING
Step 1. Necessary products. Zucchini should be young, slender, with a tender middle.
Step 2. Turn on the oven at 200 degrees. Cut the zucchini into slices one centimeter thick. Grease a small mold with vegetable oil. We spread the zucchini in it, sprinkle with salt.
Step 3. Lay the bell peppers on top, cut into strips. Salt, sprinkle with spices.
Step 4. Making an omelet mixture. Lightly beat the eggs with sour cream, kefir, sweet paprika and salt. It is not necessary to beat strongly, otherwise the omelet will fall sharply after cooling. Add chopped herbs, flour and mix.
Step 5. Pour the vegetables with the omelet mixture.
Step 6. Lay the tomato slices on top of it, scatter the pieces of butter and sprinkle with parsley.
Step 7. We place the form in a heated oven and bake for 30-40 minutes. Look at your oven. The center should thicken completely.
Step 8. We take out the finished dish from the oven, cool slightly, cut into portions and serve. Enjoy your meal!
