Pumpkin pancakes

Ingredients:

● 200 g pumpkin (puree)
● 2 pcs. chicken eggs
● 200 g flour
● 4 tbsp. sugar
● 30-40 g butter
● 200 ml cow’s milk
● 10 g baking powder
● a pinch of salt
● honey to taste (for serving)

Cooking:

In autumn, it’s time to bake not just pancakes, but pumpkin pancakes! They are very beautiful in color, tender and porous. Pakki are good because they are fried in a dry frying pan without oil, so they are completely non-greasy and healthy. Pumpkin pancakes are a great breakfast for both kids and adults.
To prepare mashed potatoes, cut the pumpkin into pieces and bake in the oven for softness at a temperature of 180-200 degrees. Grind the pumpkin in a blender. I got such a puree, but you can mash the puree in a blender a little longer and it will be more homogeneous. Puree needs 200 g.

Яйца взбить с sugarом (количество sugarа можно уменьшить, если тыква очень сладкая). Add a pinch of salt. Add pumpkin puree and melted butter to the egg mass. Whisk. Add milk. Add sifted flour mixed with baking powder. Whisk.

The dough should be thicker than for pancakes and more liquid than for pancakes. Fry pancakes in a dry frying pan (with non-stick coating) over low heat. When the bottom is fried, carefully prying with a knife, turn over. Pancakes fry quickly. Serve pancakes with honey, chocolate, jam or maple syrup.
