Lean cabbage pancakes

To make lean cabbage pancakes, you only need four ingredients: sauerkraut or pickled cabbage, flour, baking soda, and frying oil. Flour can be either traditional baking flour – premium wheat, or other more useful types of flour (whole grain, oatmeal) or their combinations with premium wheat.
Such cabbage pancakes, hearty and healthy for those who fast, will also appeal to everyone and can gain a foothold in your menu even during the non-fasting period. Outside of fasting, serve them with sour cream, fry not only in vegetable oil, but also in animal fat, and you can additionally add cracklings or bacon to the dough.
How to cook cabbage lean pancakes

Ingredients:

Sauerkraut – 1 tbsp. (200 ml) or marinated
Marinade – 1 tbsp. (200 ml) cabbage
Flour – 1 tbsp. (200 ml)
Soda – 0.5 tsp
Vegetable oil – 50 ml for frying

Both sauerkraut and pickled white cabbage are equally well suited for making dough. The difference will be as follows. Pickled cabbage stays crunchier, while sauerkraut tends to be bland.
Take a serving of cabbage along with the marinade or juice in which it is located. If necessary, if the cabbage liquid is too acidic, then dilute it to your liking with some water.

Flour should be more or less evenly mixed with soda or baking powder and then combined with cabbage marinade. Soda does not need to be extinguished, it will extinguish itself with the acid that the liquid from cabbage contains.
In this version, premium wheat flour is taken, and it also tastes very interesting if wheat flour is mixed in any ratio with rye, corn, whole grain or oat flour. Cabbage pancakes are fried in the same way as ordinary ones, laying out a serving of dough in a table boat on a hot frying pan with vegetable oil. Then the workpiece is turned over and fried on the other side. If you want to fry such pancakes in non-stick pans without oil, then be prepared for the fact that they may not turn out as fluffy …
