Recipe for zucchini caviar according to GOST

Remember the taste of Soviet squash caviar? She was just amazing! It could literally be eaten by banks. Do you want to repeat? We have a recipe for zucchini caviar, which is as close as possible to the quality standards of the USSR. So the taste will be excellent! Ingredients for 4 liter jars:

zucchini – 3 kg;
onion – 1 kg;
carrots – 1 kg;
garlic – 6-8 cloves;
sugar – 1 tbsp. a spoon;
salt – 1.5 tbsp. spoons;
vinegar (9%) – 2 tbsp. spoons;
tomato paste – 3 tbsp. spoons;
sunflower oil – 300 ml.
How to cook zucchini caviar

Please note that for this caviar recipe, the weight of the products is indicated without skins and seeds.

We clean the vegetables, grate the carrots, cut the onion into cubes.

In one pan, fry the onion in vegetable oil, and in the other, carrots.

Carrots can be covered with a lid and stirred from time to time.

We cut the zucchini into arbitrary cubes.

We transfer the onion fried until transparent to a blender, and put the zucchini in a frying pan free from onions.
