Cherry Chic Pie

Awesome pie! Very juicy, very fragrant, moderately sweet, with a delicious coconut “hat”. Cooking a pie is easy, the products are all plain. Be sure to try it, I am sure that you will simply fall in love with this soulful and such homemade cake!

You will need:

For test:
3 eggs,
100gr. butter or margarine,
¾ st. Sahara,
150gr. sour cream
1p. baking powder (10 gr.),
a pinch of salt,
~ 200gr. flour.

For filling:
1b. cherry compote (I have a jar of 580 ml.),
2 tbsp coconut.

For coconut frosting:
300gr. sour cream
¾ st. Sahara,
1 st. coconut flakes,
vanillin.

How to cook:

1. Throw the cherry on a sieve, and let the liquid drain well. If the berries are pitted, remove them.

2. For the dough, combine eggs, softened butter and sugar. Mix with a mixer.
Add sour cream, baking powder. Whisk.
Then add the sifted flour. A little less flour may be required.
To stir thoroughly. If desired, you can beat again with a mixer. The dough should be thick but pourable.
I got thicker than the author.

3. Put the dough into a mold (d 24 cm.).
If you use a split form, then it is better to lay it with baking paper, my dough has leaked out a little from the bottom. In my opinion, it is better to use a silicone mold: it is convenient to bake in it and you can pull out the cake without any problems.

4. Put cherries on the dough. Sprinkle with coconut.

5. Bake in an oven preheated to 180C ~ 20-25min. The dough should “grab” and the chips should turn brown.

6. During this time, prepare the coconut glaze. Combine sour cream and sugar in a bowl, mix thoroughly, add vanilla and coconut flakes.
It should turn out liquid, I got it thick again :)

7. Get the cake out of the oven. Spread the coconut icing over the cake.

8. Bake another ~ 20-30 min. The finished cake should be golden brown.

9. Let it cool in the mold. Best served cold

Maybe I did not turn out quite the way it should have turned out, but it was still delicious!
