Apricot Hazelnut Cupcake

For the recipe you will need:
flour – 270g
sugar – 1.5 cups
soda – 1 tsp
salt – 1/2 tsp
cinnamon – 1/2 tsp
egg – 2 pcs.
apricots (mashed) – 2/3 cup
butter or margarine – 100g
water – 1/3 cup
vanilla – 1.5 tsp
nuts (chopped) – 1/2 cup.
To make Apricot Hazelnut Cake:

Mix dry ingredients. Separately mix water, eggs, apricots and oil. Add to dry mixture. Add nuts and mix well.

Pour into a brick cake tin or four to six small tins. Bake at 180C for 50-60 minutes (large cupcake) or 40-50 minutes (small cupcakes). Check readiness with a wooden toothpick.

Cool in pan for 15 minutes, then turn out onto a wire rack.
