Bread with spelt and candied tangerines

For the recipe you will need:
flour – 300g
spelled – 200g
water – 175g
salt – 10g
sourdough – 100g
candied tangerines – 60g
honey – 30g
almonds – 60g
whole wheat flour – to taste
To prepare Bread with spelt and candied tangerines you need:

Rinse spelled, cover with water and leave for a day.

Knead the dough. Pour water into the sifted flour, Add sourdough, salt, honey. Stir and add spelled washed after infusion. Knead for 10 minutes.

Add candied fruits to the dough, knead for another 10 minutes and leave for 4 hours, covering the bowl with dough with a film.

When the dough rises, divide it into two parts. Roll each part in whole grain flour, form loaves and leave to proof for 1-2 hours.

Preheat oven to 230C. Bake with steam at 200C for 10 minutes, without steam at 180C for another 20-30 minutes.

Cool the finished bread with spelt and candied fruit on a wire rack for 2-3 hours. From the indicated amount, two loaves of 450g each were obtained.
