Pancakes stuffed with cottage cheese and cherries

Pancakes with such a delicate airy curd filling and cherry flavor are not only a wonderful dessert, but also a great option for observing the old tradition – welcoming spring.
Treat your loved ones and family with this delicacy this Shrovetide week!
Ingredients:
Cottage cheese (preferably curd mass) 300 gr.
Powdered sugar to taste
Pitted cherries 1 cup (I used frozen)
Cognac 2 tbsp
Carnation 3-4 pcs.
Cooking curd filling for pancakes:
Grind the cottage cheese through a sieve or beat with a blender, add powdered sugar to your liking.
Pour cognac into a small saucepan, add a tablespoon of powdered sugar, 3-4 tbsp. water, bring to a boil.
Put the cherry in the resulting syrup and put the cloves.
Reduce heat and simmer frozen cherries for 5 minutes, unfrozen 2-3 minutes.
Remove the cherry from the syrup and put it in the curd mass, mix everything gently.
Place the resulting filling in pancakes, roll the pancakes with an envelope.
Before serving, if desired, you can fry in butter and pour over the sauce obtained by boiling cherries.
Tip: For the curd filling, it is better to use cottage cheese not in grains, but smooth! And even better curd mass!
