Dried and fresh mushroom cutlets

For the recipe you will need:
mushrooms (fresh) – 400g
mushrooms (dried) – 50-60g
white bread (stale) – 100g
onion – 1 pc.
salt, pepper – to taste
greens, flour – to taste
rice water – 1/2 cup.
To cook Cutlets from dried and fresh mushrooms, you need:

Stew fresh mushrooms in their own juice, allowing the liquid to evaporate. Soak dried mushrooms and boil.

Pass prepared (cooled) mushrooms through a meat grinder along with onions and soaked bread. Add seasonings and rice water, flour. Stir well and take out for 20-30 minutes. to a cold place. Then make cutlets, roll them in breadcrumbs and fry on both sides until golden brown. Cutlets can be made with boiled rice or barley groats.

Minced meat for cutlets must be thick, otherwise it will fall apart.

If the cutlets crumble, you need to add a little flour or ground crackers.
