Carrot Lemon Jam

For the recipe you will need:
carrots – 1 kg
sugar – 1 kg
lemon – 1 pc.
To make Lemon Carrot Jam:

1 kg carrots washed, boiled, peeled, finely chopped and sprinkled with sugar (1 kg). Take a lemon, remove the peel with a sharp knife, scald it with boiling water (drain the water). Cut the scalded crust and boil in sugar water for 1 hour (until soft). Lemon pulp, cut into thin circles, put in cooked carrots, put boiled lemon peels in the same place. Boil all this until the syrup becomes thick and the carrots are transparent.
