Apple Roast Duck

Ingredients

1 duck carcass
4 apples
5 g ground cinnamon
20 ml lemon juice
5 g nutmeg
20 ml vegetable oil
20g frozen cranberries pepper salt

Cooking method

To prepare the main dish of the New Year’s table, wash the apples, peel, remove the core and seeds, cut into slices. Rinse the duck carcass, dry it, rub it with salt and pepper, sprinkle with lemon juice, put a few slices of apples, cinnamon and nutmeg inside, sew the cut with culinary thread. Poke a few holes in the skin of the duck with a fork to drain off excess fat. Put the duck on a baking sheet greased with vegetable oil and bake in an oven preheated to 220 ° C for 1.5 hours. Periodically baste the duck with fat formed during frying. Reduce the oven temperature to 160°C, arrange the remaining apples and cranberries around the duck, bake for another 20 minutes, then turn off the oven and let rest for 30 minutes. When serving, decorate with any greens.
