Okroshka with herring

Okroshka with herring sounds more than unusual. But, believe me, filled with kvass and sprinkled with herbs, okroshka turns out to be very tasty. The main thing is not to be afraid to improvise and discover new dishes!

Preparation description:
How to cook the original okroshka with herring?
1. First, let’s boil the eggs and potatoes. While they are on the stove, we will prepare all the other ingredients. When our eggs and potatoes are cooked, they will need to be cooled, peeled and cut into small cubes.
2. Rinse fresh cucumbers, peel and cut into small cubes or, if desired, grate on a coarse grater.
3. Rinse green onions and dill, dry and chop finely.
4. In a large saucepan, mix the prepared foods – sausage, cucumbers, green onions, eggs and potatoes. Mix well.
5. Then peel the herring (if necessary), remove the skin, bones and chop finely. Add to bowl with chopped food. Stir.
6. It’s time to dilute okroshka, dilute with kvass and salt to taste. Mix everything again.
7. When serving, add sour cream to the okroshka (optional), sprinkle with chopped dill and green onions.

Salted herring – 100 grams
Boiled sausage – 200 grams
Eggs – 2 Pieces
Cucumbers – 2 Pieces

Salt – to taste
Sour cream – to taste
