Beetroot broth okroshka

Preparation description:
In my okroshka on beetroot broth, I use a lot of fresh vegetables – radishes, tomatoes, cucumbers and, of course, greens. Beets definitely need vinegar and a little sugar. And then okroshka is prepared according to such a simple recipe.
1. Peel the beetroot, cut it arbitrarily. I usually cut into small strips. Fill with water (heartily!) And cook until tender. In the finished broth, add vinegar to taste and leave to cool.
2. Boil eggs and potatoes in their skins. Cool down. Then they will need to be cleaned and cut into cubes.
3. Wash the greens – onions and dill. Dry and finely chop.
4. Cut the sausage into small cubes.
5. Rinse radishes, tomatoes, cucumbers. Cut the stalks off the tomatoes, peel the cucumbers. Cut the tomatoes into slices, cucumbers into cubes, radishes into half rings.
6. Mix all chopped ingredients in a saucepan, salt to taste.
7. Return to the beetroot water. Add sugar to taste there. Post to dissolve.
8. Arrange the finished filling for okroshka on plates and pour beetroot broth, add sour cream or mayonnaise to taste.

Beets – 1 Piece
Potatoes – 1-2 Pieces
Cucumber – 3 Pieces
Radishes – 5-7 Pieces
Egg – 3-4 Pieces
Tomato – 1-2 Pieces
Boiled sausage – 150 grams
Vinegar – to taste
Sugar – to taste
Salt – to taste
Sour cream or mayonnaise – to taste
