Cooking:

Cook semolina porridge in milk, adding 10 g of butter. Let it cool and then add the egg. Stir.
Wash apples and raisins thoroughly. Peel the apples, and then cut into small cubes (if desired, you can grate on a coarse grater). Add raisins and apples to the porridge, mix thoroughly.
Heat oil in a large frying pan. On a hot surface, carefully, using a spoon, lay out the dough. Try to form pancakes of the same thickness. Fry over moderate heat. Serve with honey or jam.

2. Pumpkin fritters

Ingredients:

Pumpkin – 1 kg
Wheat flour – 1 cup

Cooking:

In a deep bowl, mix flour, sugar, yeast and salt, then add warm water to the flour mixture. Mix thoroughly and, covering the dough with a towel or napkin, put it in a warm place for an hour.
Grate the carrots on a fine grater, and then add it to the risen dough.
Heat vegetable oil in a frying pan. Carefully pour the dough with a small ladle or tablespoon, fry on both sides. Place cooked pancakes on paper towels to remove excess oil. Serve with mascarpone or other cream cheese.

4. Broccoli pancakes with cheese

Ingredients:

Broccoli – 250 g
Egg
Wheat flour – 70 g
Hard grated cheese (such as Parmesan)
Salt and pepper mixture to taste

Cooking:

Boil broccoli in salted water, drain in a colander and let cool. Grind the inflorescences in a blender (but do not overdo it! We do not need mashed potatoes).
Whisk the egg in a deep bowl, then add the flour, cheese, salt and pepper mixture. Then add broccoli, mix ingredients thoroughly.

Wheat flour – 3 tbsp. l.
Salt and ground pepper to taste
Vegetable oil — 70 г

Cooking:

Wash the zucchini thoroughly, then wipe them dry. Then grate on a coarse grater.
* if you still decide to cook not from young zucchini, then do not forget to cut off the peel and remove the seeds.

Whisk the eggs in a deep bowl, season with a little salt and pepper. Add the grated zucchini and mix well, then add the flour and mix well again.
Heat oil in a medium skillet. Fry pancakes on both sides over moderate heat until golden brown. A great addition to the dish would be sour cream, as well as feta cheese.

6. Cauliflower, Asparagus and Shrimp Pancakes

Ingredients:

Chicken eggs – 1 pc.
Wheat flour – 1/2 cup
Green asparagus – 1 bunch
Zucchini – 2 pcs.
Vegetable oil — 7 ст. l.

Cooking:

Boil broccoli florets, asparagus and shrimp in salted water.

Ingredients:

Wheat flour – 3 tbsp. l.
Potatoes – 2 pcs.
Small onion – 1 pc.
Spinach – 1 cup
Salt and pepper to taste
Vegetable oil

Cooking:

Wash potatoes thoroughly and peel. Grate the potatoes on a coarse grater and drain all the juice, then add the chopped spinach and onion.
Beat the egg, add flour and mix thoroughly. Add the resulting mixture to the vegetables and mix thoroughly. Salt and pepper, you can add seasonings.
Heat oil in a large skillet. Carefully roll the dough into a ball. Let the ball soak in oil, race it around the pan, and then flatten it so that it takes the form of a pancake and can be well fried on both sides until crispy. Serve the dish immediately. It goes well with balsamic or soy sauce.
