Flatcakes

Fritters came to us from ancient times. Once they were a dish for ordinary people, they were baked in large quantities for the holidays by peasants. But then the nobility also fell in love with pancakes. They are small thick pancakes made of sour dough, which are fried in a frying pan in oil. You will need: – 700 g of potatoes – 1 tbsp. a spoonful of flour – 1 small or half an onion – 500 g of apples – 1.5 tbsp. spoons of sugar – 1/2 teaspoon of lemon peel grated on a fine grater – cinnamon and cloves on the tip of a knife – vegetable oil – salt, pepper to taste. Method of preparation: Wash the apples, peel, cut into small pieces, put in a saucepan and pour 2 tbsp. spoons of water, add sugar, lemon zest, cloves, cinnamon and simmer, stirring over low heat for about 15 minutes. Peel the potatoes, grate. Peel and grate the onion too. Mix potatoes and onions with flour, salt and pepper. Fry in a hot pan with a thick bottom, for example, cast iron, in vegetable oil, spreading 2 tbsp. spoons for one pancake, slightly crushing. When the pancakes are browned around the edges, turn over and fry until cooked through. Serve with applesauce.
Airy potato pancakes

Cooking method: Soak the beans overnight, rinse, add new water and cook until cooked, cool, turn into puree. Cool, add raw eggs, salt, sugar, yeast diluted in milk, flour. Mix until the dough is homogeneous, without lumps. Put for 2 hours in a warm place for fermentation. When the dough has risen, bake pancakes from it in a pan with butter, frying on both sides. Serve hot with sour cream, butter, sweet jelly. Beans, chickpeas or chickpeas can be cooked in the same way.
Herring or sardine fritters
You will need: – 200 g of salted herring fillet – 1 cup of cream – 200 g of bread – 3-4 egg whites – 50 g of butter – pepper to taste. Sour cream pancakes
