Ossetian pies with cheese and feta cheese

Of course, the most delicious and real Ossetian pies are baked in their homeland. According to tradition, women should prepare it, kneading the dough well with their hands and baking it in the oven. But even in your own kitchen, with a little ingenuity and effort and following some rules, you can cook this dish, which is very similar to the Ossetian pie. Having tried this ruddy and juicy pie with cheese, cheese and cottage cheese, it is impossible to remain indifferent to it!

For the test you will need:

Dry yeast 1 tsp
Flour 300 g
Warm water 200 ml
Olive oil 4 tbsp
Sugar 1 tsp
Salt 0.5 tsp
Dough preparation: Dissolve yeast and sugar in warm water, add salt. Sift the flour and pour out, stirring the dough with a spoon. Pour in olive oil (any vegetable oil is also suitable instead of olive oil). Knead the dough, which should turn out soft and elastic, cover with a towel and leave it to rise for 40 minutes.

Filling preparation

For the filling you will need the ingredients:

Mozzarella cheese 100 g
Cheese 150 g
Curd 100 g
Greens (onions and parsley) – you can put more
Preparation of the filling: mash the cottage cheese and cheese with a fork, grate the mozzarella, finely chop the greens. Salt all the ingredients, mix and roll into a ball.

Preparation of the pie: when the dough has already come up, it is necessary to divide it into 3 parts, give them a rounded shape. Also divide the filling into 3 equal parts and make balls out of it. Sprinkle the table with flour, roll out the ball of dough into a round cake, in the middle of which put the cheese ball. Gather the edges of the dough and lift over the filling, pinch. Get a kind of bag. Turn this bag over with the seam down and gently roll it out with a rolling pin to a thickness of 8-10 mm, make a hole in the center with your finger so that the cake does not swell during baking. Do the same for the rest of the pies.

Cover a baking sheet with parchment and put the pies on them, grease them with a beaten egg and send them to the oven, heated at 200 C for half an hour, they should be browned.

Then take the finished pies out of the oven and grease them with butter.
