Rotolo with spinach pumpkin and mozzarella

We cut the pumpkin into cubes, sprinkle with olive oil and sprinkle with coriander, salt. Bake at 200 degrees, covered with parchment moistened with water for 30 minutes. After removing the parchment, bake for another 15 minutes, until the pumpkin is browned. In the meantime, prepare the dough, eggs, beaten and salted, mixed with flour. Knead the dough until the dough stops sticking to your hands. We cover with a film until all our filling is ready. We heat the pan on the fire, pour a little olive oil into it, finely chopped garlic and oregano, fry for a couple of minutes, add chopped spinach, stir until the water comes out and evaporates a little. After the water has evaporated, add a couple of pieces of butter! When the ingredients are prepared, roll out the dough with a thickness of 0.5 cm, rectangular shape. As soon as the pumpkin and spinach have cooled, spread the filling on the dough, first the pumpkin, then the spinach, then the chopped mozzarella and sprinkle with grated parmesan on top. Gently wrap the dough into a roll, using a kitchen towel. Boil water in a large saucepan, salt, lower the roll and cook over low heat for 25 minutes. Before serving, cut into circles, and pour melted butter on top! Dishes are extremely tasty! Enjoy your meal!
