Moravian rolls with cottage cheese and plum marmalade

Cooking time: 120 min.
Servings: 20

INGREDIENTS

~ 750 ml milk
40 g yeast
80 g sugar
1 kg of flour (better if half of the grains)
100 g margarine
1-2 tsp salt
grated lemon (or orange) zest
1-2 egg yolks
for working with dough – flour
FILLING:
500 g cottage cheese – I have “ricotta”
sugar to taste
sour cream – how much will your cottage cheese take
grated zest of another lemon
for coating the baking sheet margarine

TOP KALACHA:
~ 200 g plum marmalade (boiled in a cauldron for 1 day)

DRESSING:
1 egg
60 g margarine
3 tbsp flour
3 art. l. sugar (not powder)

HOW TO COOK

I prepared all the ingredients by hand, instead of cottage cheese I used ricotta.

I warmed up the milk and poured out 100 g, crumbled the yeast into it, sprinkled it with a spoonful of sugar, and set it aside for about 15 minutes.

Просеянную муку замесим со взбежавшими дрожжями, оставшимся молочком и сахаром, с теплым растопленым маргарином (можно жиром), поsaltла и ароматизировала с любимой тертой цедрой лимона. I kneaded the dough soft, plastic and fluffy – this is about 10 minutes of work. When it lags behind the wall, it will be good. Do not be afraid of the fact that at first the mass is sticky, knead until it stops sticking. At the end I added 2 yolks. Covered with a clean kitchen towel and left to rest for 50 minutes to allow the dough to rise. Get some rest too!

За это время, пока тесто подходит- к рикотте добавила 3-4 ст.l.сахарной пудры, 2-3 tbsp sour cream and grated lemon zest. I write approximately, because I added to taste, not counting, and I wrote the recipe the next day :)

На доске, припорошив мукой, раскатала скалкой тесто прибl. 1.5 cm layer, but if you like or don’t feel like looking for a rolling pin, you can manually flatten it with your palm. At this point, I turned on the oven at 180 ° C … I cut the layer into 8-10 cm squares, spread the curd mass in the middle, gathered the four corners, rolled the balls and spread the smeared baking sheet on the margarine with a seam down. I made a hole in the middle with my thumb and put a spoonful of plum jam there – it is so very thick.

With a beaten egg, I smeared the dough and sprinkled the very top (anywhere) with margarine, crumbled flour and sugar, and inserted it into a preheated oven, baked at a medium heat of 180 ° C for about 30-35 minutes.
