1. Cheesecake New York

Ingredients:

250 g shortbread cookies
125 g butter
750 g Philadelphia cream cheese
3 eggs, 220 g sugar, 180 g sour cream
2 teaspoons lemon zest
2 teaspoons lemon juice

Cooking:

Line a round baking dish with foil. Finely crumble the cookies, mix thoroughly with slightly melted butter. Lay in an even layer, capturing the edges, in a form. Press well.

Beat all remaining ingredients with a mixer until smooth. Pour the filling over the cookies and bake in the oven for 1 hour at 160 degrees. Do not take out the finished cheesecake immediately, let it cool slowly in the oven. Then the dessert will remain smooth and beautiful. Store the finished cheesecake in the refrigerator.

2. Chocolate Cheesecake

Ingredients:

170 g biscuits
75 g butter
220 g dark chocolate
370 g cream cheese
150 g sugar
3 eggs
150 ml cream
a pinch of vanilla

Cooking:

Grind the biscuits and mix with butter. Place on the bottom of a baking dish. Beat cream cheese, add sugar, eggs, cream and vanilla.

Melt the chocolate in a water bath. Pour into the main filling and mix. Pour the filling over the biscuit cake and bake in the oven for 1 hour at a temperature of 160 degrees. Do not take out the dessert immediately, let it cool on its own in the oven.

3. Pumpkin Cheesecake

Ingredients:

1.5 cups white crackers
80 g butter
700 g cream cheese
170 g sugar
3 eggs
500 g already baked pumpkin
a pinch of nutmeg
1 teaspoon ginger

Cooking:

Mix breadcrumbs, a pinch of ginger and oil. Put on the bottom of the mold and press down. Bake the cake in the oven for 5 minutes. Cheese, eggs, sugar, pumpkin and spices should be finely chopped in a blender. Spread the filling on the crust. Bake the dessert for 1 hour-1 hour 10 minutes at a temperature of 180 degrees. Allow to cool in the oven and then in the refrigerator.

4. No Bake Strawberry White Chocolate Cheesecake

Ingredients:

For the base: 175 g shortbread cookies, 50 g butter
For the filling: 200 g white chocolate, 300 g soft cream cheese, 200 g sour cream, 225 g strawberries

Cooking:

Crush cookies into crumbs and mix with softened butter. Tamp the mass tightly on the bottom and walls of a round detachable form with a diameter of 20 cm. Place in the refrigerator.

Melt the chocolate in a steam bath or in the microwave. Beat cheese and sour cream until combined dense homogeneous mass. Add chopped strawberries and mix with melted white chocolate and cream cheese. Pour the mixture into the prepared mold. Flatten and refrigerate for about 4 hours to set.

5. Lemon Honey Cheesecake

Ingredients:

200 g dry biscuits
50 g melted butter
1 st. l. Sahara
1.5 st. l. lemon liqueur
500 g Philadelphia cream cheese
250 g Mascarpone
150 g sugar
2 ст.l. honey
3 eggs
zest and juice of 1 lemon

Cooking:

Grind the biscuits and mix with butter, sugar and liquor. Pour the mixture into the bottom of a round springform pan and refrigerate for 30 minutes. Beat cream cheese and mascarpone with sugar, honey, lemon zest and juice. Continuing to beat, add the eggs one at a time.

Preheat oven to 150°C. Pour the filling into the biscuit mold and bake for 1 hour. Turn off the oven, leave the cheesecake in it for another 2 hours. Then cool.
