Curd pies.

I once gave this recipe to a friend of mine. After a while we meet, and she tells me – ‘I’m offended by you. Was it possible to give such a recipe to our family, we are all fat, and I will fry a huge bowl of your pies, and until we eat everything, we cannot calm down.

These pies are made very simply and quickly. For the test, you need to take 200 grams of cottage cheese, 200 grams of margarine, one egg, half a teaspoon of salt and enough flour to knead the dough. From this amount you will get a whole mountain of pies. And if you don’t want to bake the mountain right away, then the rest of the dough will lie in your refrigerator for a day or two, without losing its qualities. Pies from such a dough can be both fried and baked, I don’t even know which ones are tastier.

You can take almost any cottage cheese for dough, fatty or fat-free, store or market, fresh or well-stale in the refrigerator, anyone will do. But, I think that there is no need to explain that pies from fresh, fatty, market cottage cheese will be much tastier than from dry and old.

And so, take cottage cheese with margarine, and knead everything well with a fork. If the cottage cheese is dry, and the margarine has just been taken out of the refrigerator, then they can simply be passed through a meat grinder together. Then add the egg, salt, flour to this mass and knead well. The dough should not be very steep, the bun should stick to your hands a little. You can start cutting right away. I want to warn you that this dough is not as elastic as yeast and therefore, when you sculpt a pie, be careful, it can be easily torn.

Here, however, the fillings in such pies are not suitable for everyone. Fish and minced meat do not fit here, but cabbage and potato ones go for a sweet soul. Far from everyone loves the filling of rice with an egg, but it suits these pies as well as possible – the pies are the most tender, only the rice needs to be made fatter and add overcooked onions to it.

But the sweetest pies are the most fun. Just put in them it is not necessary to jam, but something thick that does not flow out, for example, dried fruits soaked and passed through a meat grinder (apples, raisins and dried apricots). Add sugar and cinnamon to it, and the filling will come out just amazing. And when you fry such sweet pies, sprinkle them, while still hot, on top with powdered sugar. Also, make them very small, and then it will be easy for your children. extraordinary meal.

Cottage cheese pies are fried in vegetable oil very quickly. And if you want to bake them, then first brush them on top with an egg or sour cream.
