Kefir thin pancakes

I like these pancakes for their softness and slight, barely perceptible, sourness. Kefir in this recipe can be replaced with curdled milk or slightly diluted whey. Instead of or together with vegetable oil, you can use melted butter. Very tasty thin pancakes on kefir.

Ingredients :
kefir – 750 ml;
chicken egg – 2 pcs.;
potato or corn starch – 4 tbsp. spoons;
wheat flour – 2 cups;
sugar – 4 tbsp. spoons;
salt – 0.5 tsp;
soda – 1 tsp;
vegetable oil – 5 tablespoons.
glass 250ml.
Cooking:
Mix 1 cup of kefir with sugar and salt, add a little beaten eggs. These pancakes can be baked without eggs, but then you need to put 7 tablespoons of starch.
Then add 1 teaspoon of soda without a slide. Leave for 5 minutes, during which time the soda will be extinguished with kefir.
Add sifted flour and starch. Knead the dough with a spoon. It will turn out like thick pancakes. Then you need to gradually add another 1 cup of kefir. Leave the dough for 20-30 minutes.
Next, you need to add vegetable oil and gradually dilute the dough with kefir to the desired pancake liquid. Kefir may need a little less. If yogurt is not enough, you can dilute the dough with warm water.

Bake pancakes over medium heat in a well-heated skillet.
