Red pancakes

How to cook elegant bright red pancakes? Red pancakes are very easy to make if you know some of the secrets of this exciting process. Pancakes are very elegant and tasty.

Ingredients:
table beet – 170-200 gr.;
egg – 2 pcs.;
flour ~ 1 cup;
potato starch – 1 tbsp. a spoon;
milk – 250-300 ml;
lemon juice – 1 tbsp. a spoon;
sugar – 1 tbsp. a spoon;
vegetable oil – 30 ml;
salt – 0.5 tsp.
Cooking:
To prepare red pancakes, we need 100 ml. beet juice. Raw beets should be grated on a medium grater and squeeze the juice through gauze. For this, a small beet weighing 170g was enough for me.
Mix fresh beetroot juice with eggs and lemon juice. Add salt and sugar and whisk lightly.
Put 1 heaping tablespoon of starch into a 250 ml glass. and fill the glass with flour until full. Then sift the contents of the glass into the mixture of eggs and juice. Mix everything thoroughly with a whisk. If you have corn starch, then take 2 tablespoons of this starch and add a glass of flour.
Then gradually dilute the dough with milk at room temperature. Using 200 ml. add 30 ml of milk to the dough. vegetable oil, stir and add milk so that the dough is like liquid sour cream. The dough will be pink. When frying, the dough turns bright red.
Now we bake thin red pancakes. Pancakes need to be baked on a fire below medium, because we need evenly colored pancakes. If the pancake is browned, it will turn brown in places.
Heat the pan for pancakes and for the first pancake you need to grease (with a piece of lard, butter, or pour a little vegetable oil). Pour a little dough into the center of a preheated and greased frying pan and smooth it over the entire surface with rotating movements. Fry the pancake on low heat on one side. If it is a little browned, it’s not scary, turn the pancake over and fry for literally 20 seconds. Then the pancake will not brown and will have a beautiful even color.
The dough with starch allows you to bake very thin pancakes over low heat. Taste the first pancake and add salt or sugar if needed. From these products you will get 15-17 thin pancakes with a diameter of 18 centimeters. These pancakes will decorate your festive table very much.
