French Sable Biscuits

Delicious French biscuits made from the most common ingredients. The name of the cookie “Sablé” in French means “sand”. The peculiarity of this cookie lies in its delicate, crumbly texture. And in order to achieve the consistency inherent in the Saber liver, a hard-boiled egg yolk is added to the dough. Cookies “Sablé” come in different shapes, with different flavors.

Ingredients:

Egg – 3 pcs.
Butter – 220 g
Sugar brown universal TM “Mistral” – 4 tbsp. l.
Vanillin – a pinch
Соль — 1/3 ч. l.
Cocoa powder – 1 tbsp. l.
Flour (in light dough – 140 g; in dark dough – 130 g) – 270 g

Cooking:

1. Hard boil eggs, peel, separate the whites from the yolks (whites are not needed in this recipe). Mash the boiled egg yolks thoroughly with a fork.
2. Mix softened butter with brown sugar, salt, vanilla and egg yolks.
3. Divide the resulting mass into 2 equal parts. Add cocoa powder to one part and mix.
4. Next, add flour and knead 2 types of dough.
5. Roll out light and dark dough into layers of the same size (14×9 cm.)
6. Put a light dough on a dark layer, press lightly and put in the refrigerator for 30–40 minutes.
7. Then trim the edges of the dough layers with a knife.
8. Cut into 4 plates of the same width.
9. Fold plates of two types of dough in two so that the light stripe is on the dark one, and the dark one is on the light one.
10. Cut the dough sticks into pieces 1 cm wide. Cover the baking sheet with baking paper, lay out the cookie blanks. Bake cookies in the oven at a temperature of 180 – 190 degrees for 10-15 minutes (depending on the oven).
