Fish pilaf with caraway seeds

For the recipe you will need:
cod – 700g
onion – 2 pcs.
rice – 300g
tomato paste – 2 tbsp
olive oil – 180g
juice of 1 lemon
black pepper (ground)
caraway
curry

Rinse the rice many times and pour cold water over it (so that it barely covers the grits).

Wash the fish, clean, cut into large pieces, put in a saucepan, pour a small amount of water and boil. We filter the broth (but do not pour it out), we separate the cod from the bones.

Wash, peel, finely chop the onion and crush with your hand to soften it. Fry in olive oil in a saucepan and, as soon as the onion is reddened, pour in a glass of broth and leave to simmer over low heat for 15–20 minutes.

Then add the colandered rice, pieces of fish, spices and tomato paste dissolved in 1/2 cup of water. Add 500 ml of water, mix, cover with a lid and leave on low heat for about half an hour (you need to make sure that the dish does not burn). Remove from heat, add lemon juice, stir and cover again. After 15-20 minutes you can serve.
