Beets stuffed with mushrooms

For the recipe you will need:
beets – 4 pcs.
carrots – 1-2 pcs.
onion – 1 pc.
salted mushrooms – 4 tbsp.
sour cream – 1/2 cup
vinegar – 1 tbsp.
tomato paste – 1 tbsp
salt – to taste.
To cook Beets Stuffed with Mushrooms you need:

Boil the beets until tender in water with vinegar. Peel off the skin, scoop out the middle with a spoon so that you get a cup. Lightly fry finely chopped onions and grated carrots in vegetable oil, add tomato paste, chopped beet pulp, chopped mushrooms, salt and pepper, simmer for 5 minutes.

Stuff the beets with this mass, fold it into a wide shape, pour over sour cream and bake in a preheated oven.
