Okroshka with birch sap

Instead of kvass, okroshka can be seasoned with intoxicated, i.e. fermented, cold birch sap. The excellent taste of the well-known soup is guaranteed! You can buy birch sap, you can use your own.

Preparation description:
How to cook okroshka on birch sap? I describe in detail.
Preliminary preparation is that you need to boil potatoes in their skins and eggs (hard boiled). And then we do the following:
1. Wash and chop the dill and onion. Add salt, you need to grind the greens to the juice. I recommend using fine sea salt.
2. Rinse the cucumber, cut into small cubes and send to the greens.
3. Peel the boiled cooled potatoes and cut into cubes.
4. Also chop the boiled sausage into cubes.
5. Peel the eggs, separate the whites from the yolks. Grind proteins.
6. Let’s take up the preparation of the dressing. Mash the boiled yolks with a fork, add mustard, squeeze out lemon juice (adjust the sourness to your own taste!). Add a spoonful of mayonnaise. Dressing can be diluted with a small amount of birch sap. Mix everything and send to vegetables, herbs and sausage.
7. Add birch sap to the ingredients, mix everything.
8. We decorate our soup with tomato slices and dill.

Ingredients:
Birch sap – 300 milliliters
Cucumber – 1 piece
Potatoes – 2 Pieces
Boiled sausage – 150 grams
Chicken eggs – 2 pieces
Green onions (bunch) – 1 piece
Dill (bunch) – 1 Piece
Mustard – 1 teaspoon
Salt – 1-2 pinch
Mayonnaise – 1 tbsp. a spoon
Lemon – 1 Piece (Squeeze juice out of it.)
Tomato – 1 Piece (We use for decoration.)
